Pumpkin Muffins

I was in the mood for pumpkin muffins, so I browsed several different recipes, and finally decided to combine a few different ones to come up with this recipe. And I thought that the pumpkin seed topping was a fun extra. I suppose you could leave them off, but pumpkin seeds on pumpkin muffins, what's not to love about that?

Pumpkin Muffins


Ingredients:
1 cup whole wheat flour
1 cup unbleached all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp cloves
1/4 tsp salt
1 cup pumpkin puree
1 egg
1/2 cup milk
1/2 cup applesauce
1/2 cup sugar
1/2 cup raw pumpkin seeds

Directions:
Preheat oven to 375, and grease muffin tins. In a medium bowl, combine flours, baking powder, baking soda, salt, and spices. In a small bowl whisk together pumpkin puree, egg, milk, applesauce and sugar. Combine wet and dry ingredients. Fill muffin tins 2/3 full, and top each muffin with pumpkin seeds. Place muffin tin in oven, and raise oven temperature to 400. Bake 18-20 minutes. Makes 12 muffins.
